3 highly nutritious and immunity boosting soups

As the entire country is under lockdown, people are staying home to prevent the spread of the virus. Well, while at home you can actually give your body the much needed health boost. With a handful of nourishing ingredients, you can boost up your immunity and help your body fight against infections

Here are 3 highly nutritious and immunity boosting soup recipes

Green peas soup

Ingredients

Oil

1 Onion

1tbsp  Garlic

2 Green chillies

10 Coriander stalks

2 cups Green peas

1 1/2 cups Water

1/2 tsp Crushed black pepper powder

1/2tsp Garam masala

2tbsp Fresh cream

1tsp Lemon juice

Method

Take a wok. Add oil. Add onion, garlic, green chillies, coriander stalks and saute for one-two minutes. Add green peas. Remove from heat and blend to a fine paste.

Put the mixture in a wok and add water. Give it a good stir. Add crushed black peppercorns and garam masala. Add fresh cream. Add lemon juice.

Garnish with fresh cream and crushed black pepper.

Mushroom soup

Ingredients

2 cups shiitake and button mushrooms, chopped

1 onion, chopped

6 garlic cloves, chopped

1 inch turmeric tuber, sliced

Salt and pepper to taste

1/2 cup spring onions, chopped

Method

Heat oil in a pan and fry the onions, garlic and mushrooms for 10 minutes. Add turmeric and seasonings and add 3 cups water. Let it simmer for 30 minutes and then add the greens. Simmer for 10 more minutes and serve warm.

Chicken soup

Ingredients

3 cups chicken stock

1 cup chicken strips

1 small onion, chopped

3-4 garlic, chopped

Salt and pepper to taste

1 inch ginger, chopped

1/2 cup chopped beans

1/2 cup chopped carrots

2 tbsp chopped coriander

Method

Melt the butter in a saucepan and fry all the veggies and chicken strips. Add the stock and seasoning and let it simmer for 15 minutes. Finish with fresh coriander and serve.
